Yield: Makes 6 to 8 servings

Ingredients

  • 2  tablespoons  orange juice
  • 2  tablespoons  lemon juice
  • 2  teaspoons  olive oil
  • 1/2  teaspoon  salt
  • 1/2  teaspoon  ground cumin
  • 1/2  teaspoon  hot sauce
  • 2  (15-ounce) cans black beans, rinsed and drained
  • 1  cup  cooked long-grain white rice
  • 3  plum tomatoes, seeded and chopped
  • 1  red bell pepper, chopped
  • 1/2  green bell pepper, chopped
  • 1/2  small purple onion, chopped
  • 2  green onions, sliced
  • 1  celery rib, diced

Preparation

Whisk together first 6 ingredients in a large bowl; add beans and remaining ingredients, tossing gently to coat. Cover and chill at least 1 hour.

This is a terrific salad. I made it for a big group, and it was a big hit. I didn't get but a small serving, so I made another batch for me. It made great lunches.08/22/09
