Potato Blini with Sour Cream and Caviar
These tiny potato pancakes marry perfectly with sour cream and caviar.
Yield: Makes 6 appetizer servings
Ingredients
- 2 large eggs, separated
- 1 large potato, finely grated
- 9 tablespoons all-purpose flour
- 2 tablespoons whipping cream
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Vegetable oil
- Sour cream
- Caviar
Preparation
Beat egg whites at medium speed with an electric mixer until stiff peaks form.
Whisk egg yolks until thickened. Stir in potato and next 4 ingredients. Fold in egg whites.
Pour oil to depth of 1/2 inch in a large heavy skillet; heat to 350°. Drop potato mixture by teaspoonfuls into hot oil; fry, in batches, 1 to 2 minutes on each side or until golden. Drain on paper towels. Serve immediately with sour cream and caviar.

It works well but flatten it out in the frypan and keep it thin, otherwise it tastes like a fritter. Keep it a pale golden color, overcooking ruins it. Tastes pretty authenitic.11/03/08

Served this for family & they loved it. It takes a little time & I hate to fry anything, but I will do so again when we have a special event, or like I did recently when we had friends over for brunch. They are chefs and they gave me a 5 * rataing....;-)....I understand people who don't like it tho'....You have to love caviar & many people don't.12/20/06
