Worthy of a Special Occasion

Yield: Makes 10 eggs

Ingredients

  • 5  hard-cooked eggs, peeled
  • 1 1/2  tablespoons  Dijon mustard
  • 1 1/2  tablespoons  mayonnaise
  • 5  pimiento-stuffed green olives, halved
  • 1  teaspoon  Cajun seasoning

Preparation

Cut eggs in half lengthwise; carefully remove yolks.

Mash yolks, and stir in mustard and mayonnaise; blend well.

Spoon yolk mixture evenly into egg whites. Place an olive half in the center of each; sprinkle with Cajun seasoning.

This is my standard deviled eggs. I like to add very chopped celery and scallions in with the "filling". In order to get the hard boiled eggs to shell properly, I use eggs that are 4 days old after I purchase them at the grocery. Too fresh of an egg will not peal clean.08/31/06
