Yield: Makes 4 to 6 servings

Ingredients

  • 1 1/2  to 2 pounds fresh asparagus, trimmed
  • 2  tablespoons  plus 2 teaspoons dark sesame oil
  • 1  tablespoon  plus 1 teaspoon rice vinegar
  • 1  tablespoon  plus 1 teaspoon soy sauce
  • 1  teaspoon  sugar
  • 1  tablespoon  sesame seeds, toasted

Preparation

Cook asparagus in boiling water about 4 to 5 minutes or until crisp-tender. Plunge asparagus into ice water to stop the cooking process; drain, cover, and chill 2 hours.

Whisk together sesame oil and next 3 ingredients. Chill 2 hours.

Arrange asparagus on a serving dish; spoon dressing evenly over top. Sprinkle with sesame seeds.

This is a great recipe if you need to make some things ahead of time. Definitely steam instead of boil. If you like asparagus, you will like this. Good for entertaining when its really hot and you want cool foods. Wonderful with grilled salmon.07/15/06

This was a delicious very easy to make dish. I cooked the asparagus the day before and chilled it until ready to serve. I toasted my sesame seeds the day before, too. I think the asparagus is better steamed, instead of boiling.04/20/04
