Yield: 5 servings (serving size: 1/2 cup)

Ingredients

  • 1/4  cup  finely chopped red onion
  • 2  tablespoons  chopped fresh cilantro
  • 2  teaspoons  finely chopped canned chipotle chile in adobo sauce
  • 1 1/2  teaspoons  finely chopped jalapeño pepper
  • 1/2  teaspoon  hot sauce (such as Tabasco)
  • 1/4  teaspoon  salt
  • 1  mango, peeled and chopped
  • 1  (15-ounce) can black beans, rinsed and drained

Preparation

Combine all ingredients in a bowl; toss well.

Yum. Sweet, and spicy, and savory - great combination. I've also substituted 2 peaches for the mango when I couldn't find a good one and occasionally frozen mango chunks for the same reason. I thaw and blend the frozen mango before using it, the texture is a little different, but it works - plus it's easy to keep in the freezer and whip up a quick batch.09/26/07

Great flavor even with my changes -- didn't have a mango or the chiles in the adobo sauce, so used sprinkle of chipotle chile powder and small fresh orange (with juice) finely diced. Served with Chile relleno souffle.05/11/07
