Worthy of a Special Occasion

Add some rum to this simple punch for a decidedly adult enhancement.

Yield: 10 servings (serving size: about 1 cup)

Ingredients

  • 2  cups  apple juice
  • 2  (6-ounce) cans pineapple juice
  • 1  (12-ounce) can thawed cranberry juice concentrate, undiluted
  • 1  (6-ounce) can thawed orange juice concentrate, undiluted
  • 4  cups  club soda, chilled

Preparation

Combine first 4 ingredients; stir until blended. Add soda just before serving. Serve over ice.

I served this to my bunco group last night since several of the girls are pregnant. Not only did the pregnant girls drink it but the non-pregnant ones did to. Everyone was disapointed when the pitcher was empty. It is a festive alternative to plain water or soft drinks when you want something non-alcoholic. I think I could even add an additional half to full cup of club soda next time to cut some of the sweetness. I will definitely make this again.02/06/09

I served this punch at Easter dinner, and every one of our 11 guests absolutely loved it! I made one pitcher with Malibu coconut rum, and another non-alcoholic - both were downed in record time. I'll be making this again for our Fourth of July cookout, and this time, I'm tripling the recipe!06/26/06
