Worthy of a Special Occasion

To make ahead, stir together bean mixture the day before; cover and chill. Let sit at room temperature 30 minutes before baking.

Yield: Makes 8 servings

Ingredients

  • 4  slices bacon, cooked and crumbled
  • 1  small sweet onion, chopped
  • 1  (14.5-ounce) can great Northern beans, rinsed and drained
  • 1/4  cup  spicy barbecue sauce
  • 1/4  cup  tomato sauce
  • 1/4  teaspoon  garlic powder
  • 1/2  cup  (2 ounces) shredded Cheddar cheese
  • Corn chip scoops

Preparation

Process bacon and next 5 ingredients in a food processor until smooth, stopping to scrape down sides.

Spread bacon mixture into a 1-quart baking dish or a 9-inch pie plate.

Bake at 350° for 20 minutes; sprinkle cheese evenly over top, and bake 5 more minutes. Serve immediately with chips.

I followed this recipe exactly as written and the results were just plain "blah". I ate a couple scoops, but after one bite, my husband didn't touch it for the rest of the night. No offense to those who end up really linking this dip, but this late night snack was a waste of time and ingredients.02/23/08

Made this dip for a neighborhood Memorial Day cookout. We all agreed that this dip lacked flavor. I used garlic and not powder (of course!) and still the flavor was very bland. I'm not sure what this needs for flavor, but it definately needs something.05/31/05
