Ranch Slaw
Yield: 12 servings (serving size: 3/4 cup)
Ingredients
- 1/2 cup sliced green onions
- 2 (10-ounce) bags angel hair slaw
- 2/3 cup fat-free ranch dressing
- 2 (11-ounce) cans mandarin oranges in light syrup, well-drained
- 1 ripe peeled avocado, pitted and coarsely chopped
Preparation
Combine green onions and slaw in a large bowl. Add dressing; toss to coat. Add remaining ingredients; toss gently. Serve immediately.
Note: Unless you plan to serve all of the salad at one time, it's best to make half the recipe becuase it will water out if stored in the refrigerator for any length of time.

They aren't kidding--this waters out really fast. That combined with the avocados browning means that I'll probably keep looking for better coleslaw recipes. Still, I do like the addition of the mandarine oranges.08/29/06
