Worthy of a Special Occasion

Yield: 16 servings (serving size: 1 brownie)

Ingredients

  • 3/4  cup  sugar
  • 6  tablespoons  reduced-calorie stick margarine, softened
  • 1  large egg
  • 1  large egg white
  • 1/2  cup  all-purpose flour
  • 1/4  cup  unsweetened cocoa
  • 1  tablespoon  vanilla extract
  • Cooking spray
  • 1  (8-ounce) block fat-free cream cheese, softened
  • 1/4  cup  sugar
  • 1  large egg white

Preparation

Preheat oven to 350°.

Cream 3/4 cup sugar and margarine at medium speed of a mixer until light and fluffy. Add egg and 1 egg white; beat well.

Add flour and cocoa to creamed mixture; beat well. Add vanilla; beat well. Pour into a 9-inch square baking pan coated with cooking spray; set aside.

Beat cream cheese and 1/4 cup sugar at high speed of a mixer until smooth. Add 1 egg white; beat well. Pour cream cheese mixture over chocolate mixture; swirl together using the tip of a knife to marble.

Bake at 350° for 30 minutes or until done. Cool completely on a wire rack.

these are yummy! not totally awesome, but good nonetheless! i used whole wheat pastry flour instead of all purpose, and used half splenda and half baker's sugar, and they rose and taste great!05/31/08

I gave this three stars but it really could have been four-this recipe was really quick and easy to whip up and made delicious brownies. I would not go so far as to say you can not tell they're light, because you can, but they are still really good. Not worthy of a special occasion, but I would definitely make them again for an everyday dessert.08/11/06
