The sweet-spicy Pink Lady apples complement the tartness of the cherries and the vinaigrette in this slaw, which is a natural companion for pork chops or ham. Cameo, Fuji, or Gala apples will also work well.

Yield: 8 servings (serving size: 1 cup)

Ingredients

  • Vinaigrette:
  • 1/3  cup  packed brown sugar
  • 1/3  cup  cider vinegar
  • 1 1/2  tablespoons  vegetable oil
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  freshly ground black pepper

  • Slaw:
  • 2 1/2  cups  chopped Pink Lady or other sweet apple
  • 1  (12-ounce) package broccoli slaw
  • 1  (3-ounce) package dried tart cherries
  • 2  tablespoons  unsalted sunflower seed kernels

Preparation

To prepare vinaigrette, combine first 5 ingredients in a small bowl, stirring well with a whisk.

To prepare slaw, combine apple, broccoli slaw, and dried cherries. Drizzle with vinaigrette; toss well to combine. Sprinkle with sunflower seeds; chill for up to 3 hours.

We liked this, a fruity change-up and good match to BBQ. But the vinaigrette is too sweet, definitely would recommend you start with half the sugar and add more to taste -- then dress the slaw. We used the dried cherries but can definitely see switching to less-expensive cherry-cranberries.07/09/09

This recipe is great with pork. I couldnt' find broccoli slaw so I simply peeled and chopped broccoli and this worked. Also, my store didn't carry dried cherries or cider vinegar so I replaced the dried cherries with dried cherry flavored cranberries which worked well. I substituted the cider vinegar with one part white wine vinegar and one part apple juice which worked, but I might be able to find a better substitute. Next time I may try sherry vinegar instead if I still can't get cider vinegar. I wouldn't make this recipe to far in advance becasue the apples start to turn pretty fast and it looses a little something.01/13/09
