Brown Sugar-Cinnamon Pecans

Worthy of a Special Occasion

Yield: 2 cups

Ingredients

  • 2  tablespoons  butter or margarine
  • 1/4  cup  firmly packed brown sugar
  • 1  tablespoon  pecan-praline-flavored ground coffee
  • 2  tablespoons  orange juice
  • 1/2  teaspoon  ground cinnamon
  • 1/4  teaspoon  ground red pepper
  • 2  cups  pecan halves

Preparation

Melt butter in a large skillet over medium heat; add brown sugar and next 4 ingredients. Stir well. Add pecans, stirring well to coat. Remove from heat.

Spread coated pecans on a lightly greased 15" x 10" x 1" jellyroll pan. Bake at 325° for 14 to 15 minutes, stirring every 5 minutes. Cool completely. Break nuts apart.

I did not have pecan praline coffee so I did not use. I substituted orange liquor for orange juice (triple sec) and they came out great. I intend to gift some for friends.12/14/08

This was a rather easy recipe to make. I could only find pecan flavored coffee, instead of pecan-praline, and it tasted very good. I didn't use a jelly roll pan and burned the first batch, but used parchment paper on a cookie sheet on my next attempt and all was great!!! Lots of compliments from my guests.11/27/05
