Yield: 1 1/4 cups (serving size: 1 tablespoon)

Ingredients

  • 2  cups  frozen blueberries, thawed
  • 1/3  cup  sugar
  • 2  tablespoons  fresh lemon juice
  • 4  teaspoons  cornstarch

Preparation

Combine all ingredients in a medium nonaluminum saucepan; bring to a boil. Cook 3 minutes over high heat or until thick, stirring constantly. Remove from heat; cover and chill.

This is a great recipe and a very easy way to use blueberries. I used fresh blueberries. Excellent with vanilla ice cream (althought that kind of defeats the purpose of cooking light!).07/24/07

Wonderful! Served over plain cheesecake that my guests brought to dinner. I used blueberries that I picked on my parents' farm and had kept in the freezer. This would be great on icecream, too!05/12/07
