Yield: 3 cups

Ingredients

  • 8  ripe plum tomatoes, coarsely chopped
  • 1/3  cup  finely minced sweet white onion
  • 2  small garlic cloves, minced
  • 1  jalapeno pepper, seeded and minced
  • 1/4  cup  chopped fresh cilantro

Preparation

Combine the tomatoes, onion, garlic, jalapeno, and cilantro. Stir together until well mixed. Season to taste with salt. Serve at room temperature.

I used a little lime like someone previously wrote on a review. Don't make the same mistake I did. I used fresh tomatoes from my garden. I don't raise plum tomatoes, so I used "regular" tomatoes and did not core and drain them and the salsa was too runny.07/08/06
