Garlic and Oregano Baby Back Ribs

Worthy of a Special Occasion

Yield: 4 servings

Ingredients

  • 4  pounds  baby back pork ribs
  • 5  garlic cloves, finely chopped
  • 3  tablespoons  fresh oregano, chopped
  • 1  teaspoon  cayenne pepper
  • 2  teaspoons  kosher salt
  • 1/4  cup  olive oil

Preparation

Heat oven to 400°F. Place the ribs in a roasting pan or on a baking sheet in one layer. In a bowl, combine the garlic, oregano, cayenne, salt, and oil and mix well. Cover both sides of the ribs with the garlic and oregano mixture, coating evenly.

Roast in the oven for 1 hour flipping once after 30 minutes. Remove and let rest, covered, for 10 minutes. Reserve a fifth of the ribs (about 5 or 6 ribs) for another use.

Super-easy to make. You can approximate the ingredients and it still turns out, the paste/marinade just needs to be spreadable and enough to cover both sides. I've used dried as well as fresh oregano with little difference, and since I'm a garlic head I've doubled the amount of garlic. It always comes out delicious and gets rave reviews. I can't emphasize how easy it is and finger-licking tasty. Much better than using a globby BBQ sauce!06/03/07
