Baked Oatmeal
Yield: 5 servings (serving size: 2/3 cup)
Ingredients
- 2 cups uncooked quick-cooking oats
- 1/2 cup packed brown sugar
- 1/3 cup raisins
- 1 tablespoon chopped walnuts
- 1 teaspoon baking powder
- 1 1/2 cups fat-free milk
- 1/2 cup applesauce
- 2 tablespoons butter, melted
- 1 large egg, beaten
- Cooking spray
Preparation
Preheat oven to 375°.
Combine the first 5 ingredients in a medium bowl. Combine the milk, applesauce, butter, and egg. Add milk mixture to oat mixture; stir well. Pour oat mixture into an 8-inch square baking dish coated with cooking spray. Bake at 375° for 20 minutes. Serve warm.

I made this for Christmas morning, adopting several of the suggestions (craisins instead of raisins, added a splash of vanilla) and it was delicious! I was pleasantly surprised, as was my husband who had seconds. The only change I would make would be to cook it a little less next time to make it slightly creamier.12/28/09

I have been making this for years, my whole family loves it. This recipe is great, I make it all the time. I also cut the sugar to about 1/3 cup, and add spices. I have read the other reviews and next time I will try it with pumpkin, and the muffin tin idea is great! I can't wait to try it again, even though I still have some in the fridge right now.10/18/09
