Creamy Lime Dressing

Serve as a dip for raw vegetables or baked chips, as a salad dressing, or as a sandwich spread.
Yield: Makes about 2 1/2 cups
Ingredients
- 1 (16-ounce) package firm tofu, drained
- 1/2 cup chopped fresh parsley*
- 1/2 cup fresh lime juice
- 1/2 cup olive oil
- 1/4 cup tahini
- 2 tablespoons lite soy sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
Preparation
Process all ingredients in a blender or food processor until smooth, stopping to scrape down sides. Chill until ready to serve.
*1/2 cup chopped fresh basil may be substituted.
Note: Tofu is made from soybeans, making it an excellent source of protein and cancer-fighting antioxidants. Look for brands fortified with calcium.
