Ingredients

  • 7  to 8 pounds baby back ribs
  • 1/2  cup  cider vinegar
  • 2  tablespoons  seasoned salt
  • 2  teaspoons  freshly ground pepper
  • 2  large onions, sliced
  • Chipotle Barbecue Sauce

Preparation

Place ribs in a large roasting pan. Pour vinegar over ribs. Rub ribs with seasoned salt and pepper. Separate onion into rings, and place atop ribs. Bake, covered, at 400º for 2 1/2 hours; drain. Return ribs and onion to roasting pan. Pour Chipotle Barbecue Sauce over ribs, turning to coat.

Bake, uncovered, 25 more minutes.

My husband declared these the best ribs I've ever made. He is a rib addict! I followed the recipe but used 5# of ribs for 4 of us (we had leftovers). I only made half the BBQ sauce. I added 3 chipotle peppers for half the recipe and the sauce was not overly spicy. Next time I will make the whole sauce recipe.08/07/07

My mother-in-law proclaimed these the best ribs she's ever had! After reading a few other rib recipes, I decided to reduce the oven heat from 400 to 325. 400 seemed awfully high to me. I also halved the chipotle barbecue sauce recipe. 1 1/2 cups of sauce for four racks of ribs was plenty.07/05/07
