Worthy of a Special Occasion

Yield: 4 servings (serving size: 1 1/2 cups salad and 2 onion slices)

Ingredients

  • Cooking spray
  • 8  (1/4-inch-thick) slices onion
  • 1  teaspoon  sugar, divided
  • 6  cups  gourmet salad greens
  • 1  cup  sliced Fuji or Gala apple
  • 1/4  cup  (1 ounce) grated Gruyère cheese
  • 1  tablespoon  water
  • 1  tablespoon  white wine vinegar
  • 1  teaspoon  olive oil
  • 1/4  teaspoon  salt
  • 1/4  teaspoon  black pepper

Preparation

Place a large nonstick skillet coated with cooking spray over medium heat. Carefully arrange 4 onion slices in skillet, and sprinkle with 1/2 teaspoon sugar; sauté 4 minutes on each side or until golden brown. Wipe skillet; repeat procedure with remaining onion slices and 1/2 teaspoon sugar.

Combine salad greens, apple, and cheese. Combine water, vinegar, oil, salt, and pepper; pour vinegar mixture over salad green mixture, tossing to coat. Divide salad evenly among 4 plates; top each serving with onion slices.

Just made this tonight for the second time ... really yummy. Didn't change anything except used sherry vinegar instead of white wine vinegar.06/22/04
