Yield: Makes 6 servings

Ingredients

  • 1/2  cup  light mayonnaise
  • 1  tablespoon  sugar
  • 2  tablespoons  rice wine vinegar
  • 1  teaspoon  salt
  • 1/2  teaspoon  ground ginger
  • 1  (12-ounce) package pre-washed broccoli and cauliflower florets blend, coarsely chopped
  • 1/2  (10-ounce) package shredded carrots
  • 1/4  cup  roasted peanuts, chopped

Preparation

Whisk together first 5 ingredients in a large bowl. Add broccoli mixture and carrots, tossing to coat. Sprinkle evenly with nuts.
