Ingredients
- 1/2 cup light mayonnaise
- 1 tablespoon sugar
- 2 tablespoons rice wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 1 (12-ounce) package pre-washed broccoli and cauliflower florets blend, coarsely chopped
- 1/2 (10-ounce) package shredded carrots
- 1/4 cup roasted peanuts, chopped
Preparation
Whisk together first 5 ingredients in a large bowl. Add broccoli mixture and carrots, tossing to coat. Sprinkle evenly with nuts.
