Worthy of a Special Occasion

Notes: Serve with tortilla chips or crisp raw vegetables.

Yield: Makes about 1 1/2 cups; 4 servings

Ingredients

  • 1  ripe avocado (3/4 lb.)
  • 1/3  cup  chopped firm-ripe tomato
  • 2  tablespoons  minced shallots or onion, rinsed and drained
  • 1  tablespoon  lime juice
  • 1  tablespoon  chopped fresh cilantro
  • 1  clove garlic, peeled and pressed or minced
  • 2  to 3 teaspoons minced fresh jalapeño chili
  • Salt

Preparation

1. Pit and peel avocado. Place in a bowl.

2. Add tomato, shallots, lime juice, cilantro, and garlic. With a potato masher, coarsely mash mixture. Add chili and salt to taste, and mix.

Very good - but garlic can be overwhelming - a little less would go a long way. Cilantro is a great spice addition, but I also use a pinch of Cumin to bring out the flavor. The lemon is essential to prevent discoloration - even if consumed the same day. Leave the texture a little chunky for a natural presentation01/13/06

This recipe is nearly perfect. My only quibble is that I think half a clove of garlic would more than suffice, especially considering that it is being used raw. This is the only recipe I ever use, and you can't go wrong with it. Use it ALL the same day. Guacomole does not keep well, no matter what "tricks" you know.05/07/05
