Baked Potato Soup with Bacon
Yield: 2 servings (serving size: 2 cups soup, 2 tablespoons green onions, and 2 teaspoons bacon bits)
Ingredients
- 1 pound baking potatoes, cubed
- 2 cups 2% low-fat milk
- 2 teaspoons reduced-calorie margarine
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup sliced green onions
- 4 teaspoons bottled real bacon bits
Preparation
Place potato cubes in a medium saucepan; cover with water, and bring to a boil. Cook 15 minutes or until very tender; drain. Return potatoes to pan, and mash to desired consistency. Add milk, margarine, salt, and pepper; stir well. Cook over medium heat until thoroughly heated, stirring frequently.
Ladle soup into individual bowls; top with green onions and bacon bits.

This soup is fabulous. I baked 4 large potatoes and mashed them, as per the recipe. Then followed the recipe as stated except I added a little onion & garlic powder and I also boiled 4 med. potatoes, peeled and diced them, then added them to the soup. This gives it a little more substance. I also cooked a few more pieces of bacon than called for and added them to the body of the soup. Hubby & I both loved this soup and I can't wait to make it again. (Leftovers are even better).11/09/08

The first time I made this my husband and I thought it was just wonderful and easy to make. I gave the recipe to our daughter and she could not stop raving about it and her whole family loved it, even her 8 year old son!01/23/08
