Here's a fun twist on the classic martini that uses rum and tropical fruit for flavor.

Yield: 1 serving (serving size: about 1/2 cup)

Ingredients

  • Crushed ice
  • 1/4  cup  white rum
  • 2  tablespoons  Triple Sec (orange-flavored liqueur)
  • 2  tablespoons  mango juice
  • 2  teaspoons  fresh lime juice
  • Mango slices (optional)

Preparation

Place crushed ice in a martini shaker. Add rum, liqueur, and juices; shake to combine. Strain rum mixture into a martini glass; garnish with mango slices, if desired. Serve immediately.

This was delicious! I used mango nectar (not juice, if there is even a difference) and didn't change anything else. YUM! It didn't taste like rum! Actually tasted like a martini with a mango twist! My mom thought it was a little strong and I actually could feel it kicking it halfway through and didn't end up finishing it, but hey, some calories saved. I will make this many more time! These are great! Just the right balance of sweet and tart, not too heavy. The only thing I did differently was use dark rum instead of light because that's what I had on hand. These would be great to serve to guests along with a light appetizer while you wait for dinner to finish. They're pretty, too, especially if you rimmed a cocktail glass with sugar before serving.04/29/06
