Worthy of a Special Occasion

This dish is reminiscent of holiday stuffing. Leave the peel on the apple for color and texture.

Yield: 6 servings

Ingredients

  • 8  ounces  turkey Italian sausage
  • 2  cups  chopped Granny Smith apple
  • 1  cup  chopped onion
  • 2  cups  1% low-fat milk
  • 1  cup  egg substitute
  • 3/4  cup  (3 ounces) shredded sharp cheddar cheese, divided
  • 1/4  cup  chopped fresh parsley
  • 1/4  teaspoon  salt
  • 1/8  teaspoon  black pepper
  • 8  ounces  (1-inch) cubed day-old sourdough bread (about 9 cups)
  • Cooking spray

Preparation

Preheat oven to 350°.

Heat a large nonstick skillet over medium-high heat. Remove casings from sausage. Add sausage to pan; cook for 4 minutes or until browned, stirring to crumble. Stir in apple and onion. Cover and cook over low heat 5 minutes or until apple is crisp-tender. Remove from heat; cool slightly.

Combine milk, egg substitute, 1/4 cup cheddar cheese, parsley, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a large bowl, stirring with a whisk. Stir in sausage mixture. Add bread, and stir gently to combine. Let stand 10 minutes. Spoon into a 2-quart baking dish coated with cooking spray. Sprinkle with remaining 1/2 cup cheese. Bake at 350° for 45 minutes or until pudding is set and lightly browned.

Deelish! I doubled the amount of onion and apple, added 2 tsp of dried thyme, doubled the salt and omitted the egg substitute for 5 large eggs instead. Bread to liquid ratio was perfect, baked it at 350 for 35 minutes then crisped it at 375 for another 10-15 minutes. Came out beautifully. Seemed more likely to serve 8 as a main entree and 10 as a side, the portions are very filling!10/15/08
