This is a wonderful recipe. It is more time consuming than most stews, but well worth the effort. The blue cheese and chives are a must. I did decide to use 1 bottle wine and substituted broth for the second bottle...delicious! I am serving it tonight with crunchy french bread and a simple green salad! 02/21/09

This is so delicious! It's well worth the time it takes to brown the meat (it took me an hour). I used a shiraz grenache blend for the 2 bottles of wine. The flavors are deep and rich. The blue cheese and chives compliment all the other flavors very well. I used regular paprika as I didn't have any of the smoked kind. Will definitely make this again. 02/04/08

This was probably the most flavorful stew I have ever made. Everyone, including my young children, loved it. I did make some changes: a box of beef broth for one of the bottles of wine, regular chili powder because I didn't have chipotle chile powder and gorgonzola crumbles for blue cheese. It does take awhile to brown all the meat, but it didn't take me an hour - probably about 45 minutes or maybe less. This dish was delicious and comforting on a cold winter's evening! 01/29/08

My husband and I teamed up to make this together for his poker night, and it was quite the hit! The blue cheeses crumbles compliment the depth of the wine, and the browned beef. It all came together to create a flavor explosion - and the dish looks amazing when served in a bowl.
The only downside to the recipe is that the browning of the beef takes time - so you have to allow for that. Recipe mentions 5 min. per side, but I think 4 min per will do it - and regarding the size of the potato chunks, we used medium russets and cut them in eighths, and that worked very well.
So, when you are in the mood for deliciousness, and have some time, this is your recipe to try!
