This dip was loved by a very palate diverse and hard to please all crowd.... my family, so needless to say I was thrilled when it got rave reviews from all! It makes a great football watching dip, and also appropriate for parties and get togethers. Was still great even though I did not have the green onions, would probably be even better!! A definite keeper! 11/02/09

I have made this dip several times, and it is always a crowd-pleaser. I couldn't find chipotle in adobo at my grocery store, so I substituted enchilada sauce. It doesn't have the same flavor or kick as the chipotle in adobo, but the dip is still delicious. I have made it with and without chicken, and both versions turned out fine. This is a great appetizer! 03/07/09

I hesitated to give this even three stars, but is definitely a "good, solid recipe." I followed it to a tee and it was good when it was hot, just out of the oven, but if you let it cool down even a tad, the consistency turned too thick/hard that my blue corn chips would break as the creamy, cheesiness turned solid. Maybe the key is to keep it warm throughout serving. Tried to serve this as something to snack on throughout the super bowl, but had to keep reheating it. This is almost exactly like the filling I use for an enchilada casserole, which I would recommend as an alternative use. 02/04/09

I really loved this recipe. I served it for Thanksgiving and it was gone in no time. I plan to make it again for my husband's bowl party. It is really good with the sweet potato chips, but I also used the blue corn chips. 01/17/09

OUTstanding appetizer dip. Use the leftover chipotle peppers in the Chipotle Barbeque Meatballs. Both are simple, yet elegant appetizers which will be the star attractions at your next party or holiday function. 12/12/08

LOVE this baked dip! A tad spicy, so I just use a LITTLE less peppers. Everyone always asks for the recipe. I always make it a day ahead and bake it when I need it the next day. Very good leftover, too! 12/10/08
